Oatmeal Molasses Bread

Recipe by our copywriter Lucy’s mom, Elizabeth Pash

Ingredients

2 cups old fashioned oats
1 cup boiling water
1 stick of butter
Handful of salt
ó cup plus a tablespoon of robust molasses
1 cup lukewarm water
2 envelopes of yeast
1 teaspoon of sugar
6 cups flour (bread flour preferred)

Directions

Mix oats, boiling water, butter and salt.
Let sit for 1 hour.
Mix molasses, lukewarm water, yeast and sugar.
Add this mixture to the oat mixture and start adding the flour.
Rinse out the bowl, grease it, and place the dough inside.
Cover bowl with greased aluminum foil and keep in a warm place or one hour, until it doubles in size.
You’ll know it’s ready for the next step if you stick your finger in the dough and the depression stays.
Preheat oven to 350 degrees.
Knead the dough and divide into two equal parts, shaping into loaves.
Place loaves in two greased bread pans and let rise again for about one hour.
Place loaves in oven and bake for about 50 minutes.
